Malacate, under the expert guidance of Jhon Zarate, is conceived as a space where cuisine and culture meet. Inspired by the malacate, a tool that has historically connected the surface with the deep, the restaurant reflects this connection in its culinary approach. With a rigorous selection of fresh, local ingredients, Jhon applies culinary techniques that honor the authenticity and history of each product, offering dishes that are true expressions of the Colombian land and culture.
Malacate arose in response to the need to offer the first Neobistro in Bogota, a cuisine that focuses on advanced cooking techniques for the everyday. The challenge was to create a restaurant that is not only a place to eat, but also a place to learn and experience the connection between food, its origin and its impact on our culture.
Malacate's design is a tribute to the earth, with a color palette that references the natural tones of the soil and vegetation, and a custome made typography that suggests rusticity, imperfection, balance and elegance. The restaurant uses the symbolism of the winch not only in its name, but as a central element in its visual narrative, highlighting the traction and upward movement, symbolizing the act of bringing the best of the land to the surface. Every aspect of the branding reinforces Jhon Zarate's philosophy of simplicity, purity and respect for the ingredient.
